Why the same spoon weighs different amounts
A tablespoon always holds about 15 ml, but the weight depends on the ingredient's density: 15 ml of water weighs 15 g, the same volume of flour only about 8 g, and cocoa powder barely 7–8 g, because powders trap air. All conversions here assume level measures — swept flat with the back of a knife. A heaping spoonful can hold nearly twice as much, and packing flour or cocoa into a measuring cup throws the numbers off, so spoon it in loosely.
When volume is fine and when you really need a scale
For sauces, soups, dressings and small amounts, converting by spoons and cups is perfectly fine. Baking is a different story: just 10% extra flour or sugar can genuinely change how a cake or bread turns out, so for delicate recipes it's worth weighing. Also keep in mind that not every cup is the same size — this tool uses the standard US cup of about 240 ml, while a UK cup is 250 ml and the mugs in your cupboard can be anything at all.
